Vanilla Bean Scones

We want to share a vanilla bean scone recipe by Laura Vitale. I, actually my wife has tried these at home. I can tell you now that if you make these in the evening for breakfast, it will not last past midnight!!

Time : Prep 10 min | Cook 20 min

Ingredients : Makes about 4Vanilla Bean Scones

  • 1-1/4 cup Flour
  • 1/3 cup Sugar
  • 1-1/2 tsp Backing Powder
  • 1/4 tsp Baking Soda
  • 1/2 tsp Salt
  • 8 Tbsp Cold Unsalted Butter
  • 1/2 cup Heavy Cream
  • 1 Vanilla Bean, seeds scraped
  • 1 Egg
  • Egg wash (one egg beaten with 1 tbsp of water)
  • Coarse Sugar

Directions :

  1. Preheat oven to 400 degrees Fahrenheit and line baking sheet with parchment paper
  2. Add scraped vanilla seeds into the heavy cream and let it sit for 5 min
  3. Add flour, sugar, baking powder, baking soda and salt into mixer bowl and mix with a paddle attachment until mixed throughly
  4. Add cold butter and mix until the butter has broken up and has spread evenly throughout the mix
  5. Whisk egg and vanilla seed + cream mixture
  6. Combine the whisked mixture to the dry mixture in the mixer bowl and mix until dough come together
  7. Dump dough on a lightly floured board and flatten to about 3/4 inch thickness and any shape you want
  8. Brush dough with egg wash and sprinkle top with raw sugar
  9. Bake for 17-18 min or until golden brown
