Vanilla Bean Buttercream Recipe

We would like to introduce a wonderful yet easy-to-do Vanilla Bean Buttercream Recipe introduced by Amber Spiegel. The buttercream can be used to decorate cupcakes, cakes and other desserts. I have simplified the instructions a little bit but if you want the specifics, the video has instructions written on the screen for you to pause and follow.

Time :  about 15 min

Ingredients : makes 18-24  cupcake toppings

  • 4 large egg whites (save those yolks for bread pudding!)
  • 1 cup sugar
  • 3 sticks (1-1/2 cups) unsalted butter, softened
  • 1 pinch salt
  • 1/2 Vanilla Bean, scraped

Directions :

  1. Place egg white and sugar into a mixing bowl
  2. Bring a saucepan or bowl with about 2 cups of water to a simmer
  3. Heat the mixing bowl with the warm water
  4. Whisk until the sugar is dissolved – make sure the water in the sausepan does not boil
  5. Add butter and whisk on low speed until well blended
  6. Increase speed to medium for 3 min
  7. Slice vanilla bean and scrape out the seeds with the dull side of the knife
  8. Add vanilla beans and salt
  9. Keep whipping until fluffy
